2 tablespoons butter or margarine
1 cup brown sugar
1 can pineapple rings
1 small jar maraschino cherries
3 eggs (separate yolks and whites)
1 cup sugar
1 cup flour
6 tablespoons *hot* water (from tap)
1 Teaspoon vanilla
1 teaspoon baking soda

Directions:
Directions:
Melt butter in an iron skillet or cake pan. Add brown sugar and bring to a simmer. Arrange fruit directly on to the bottom of the pan. In a separate bowl, beat egg yolks with white sugar. Add flour and hot water - then add vanilla and baking soda. Beat egg whites into the batter. Pour batter on to hot fruit mixture and bake at 350 degrees for 40 minutes or until an inserted toothpick comes out clean.
