1 cup sugar
2 tsp. salt
1 tsp. ground cumin
1 tsp. ground cinnamon
1 tsp. coarse ground pepper
1/2 tsp. cayenne pepper
1 large egg white
6 cups unsalted nuts (walnuts, pecans, almonds, and/or cashews)

Preheat oven to 325. Grease two 10 1/2 x 15 1/2 jelly roll pans. In small bowl, stir sugar, salt, cumin, cinnamon, pepper, and cayenne. In large bowl, beat egg white until foamy. Stir nuts into egg white. Add sugar mixture. Toss thoroughly.

Divide nut mixture between jelly roll pans, spread evenly. Bake 25-27 minutes or until golden brown and dry, stirring twice while cooking. With slotted spoon, transfer nuts to waxed paper. Spread in a single layer to cool. Store in airtight container.
