3 slices thick-cut bacon, diced
2 shallots, finely chopped
2 cloves garlic,finely chopped
8 oz. spinach, drained
4 oz. sharp cheddar cheese, grated
1 c. diced cornbread
1 T. parmesan cheese
8 boneless pork loin chops, 1 1/4-inches thick
1/2 tsp. salt & freshly ground pepper
1 T. olive oil

Cook bacon until crisp, crumble & set aside. Add shallots & garlic to bacon drippings & cook over medium heat for 2 minutes. Add spinach & cook 7-9 minutes, stirring twice. Cool completely. Stir in cheddar cheese, cornbread, parmesan, & bacon. Make a 1 in. incision on meaty side of pork chops. Stuff each chop with about 1/4 c. stuffing. This can be wrapped in plastic wrap for up to 1 month. Heat oven 375 º. Season chops with salt & pepper, secure opening with toothpicks. Heat olive oil & cook chops for 2 minutes per side. Transfer to oven & bake for 15 minutes or until internal temperature reaches 155 º.
