Banana's Foster Recipe

2 tbsp unsalted butter
1/4 C. Brown sugar
1 tsp cinnamon
2 under ripe bananas sliced 1/2 inch thick
1/4 C dark rum (I perfer sailor Jerry's)

Directions:
In a large heavy skillet melt the butter and then add the brown sugar. Add the cinnamon and when sugar is dissolved add the banana's. Bring to a simmer so the liquid is hot. Add the rum and ignite by the stove flame or with a long grill type lighter. Flame should burn for 1 -2 minutes. Once flame dies out the syrup should be a nice consistancy. If it seems to watery cook down a bit longer so the sauce becomes a bit thicker.

get your bowls of ice cream ready and then ladel the bananas and sauce over the top. Serve.
