2 chickens, cut into pieces
Salt, pepper, garlic salt, cayenne pepper, to taste
1/3 cup flour
1/3 cup oil
1 large onion
1 small bell pepper
Chicken broth

Directions:
Directions:
Season chicken with salt, pepper, garlic salt and cayenne pepper, bake at 400 degrees for 20 min
Make a dark roux with flour and oil, add chopped onions and cook till transparent. Add chopped bell pepper and sauté 15 min more.add chicken broth slowly , stirring.
Add chicken to pot with dripping. Stir well, cover pot and simmer on stove for 30 to 45 min. Serve over rice
