2 gallons of cucumbers
2 cups lime
8 1/2 quarts water
Solution:
1 cup vinegar
1 T alum
1 small bottle red food coloring
water to cover cucumbers
Syrup:
3 cups vinegar
2 cups water
10 cups sugar
8 sticks cinnamon
2 pkgs red hots

Directions:
Directions:
Peel slice, and core cucumbers. Soak in lime, and water solution. Let stand 24 hours. Drain, wash, and soak in cold water for 3 hours. Combine solution ingredients. Drain cucumbers from cold water and simmer in solution for 2 hours. Drain and throw away juice. Bring the syrup ingredients to a boil and pour over rings. Let stand overnight. Next morning, remove and reheat syrup and pour over cucumbers. Repeat for 3 days. On 4th day, pack cucumber rings in jars, reheat syrup and pour over cucumber rings in jars. Seal jars.
