Ingredients:
Ingredients:
Fresh grated garlic cloves
Extra virgin cold pressed olive oil
Balsamic vinegar
Pepper, and other spices (Herbes de Provence works well)
Nice fresh bread: a baguette or olive bread for example

Directions:
Directions:
In a shallow dish, grate one or more cloves of garlic (depending upon one's fondness for garlic.) An alternative is to crush the garlic in a press or with the flat of a knife. The more pulverized, the better. Cover the garlic with the olive oil. Dribble some balsamic vinegar on top. Add pepper and spices to taste. Let sit 10-20 minutes so flavors meld.
Taste. If the result is too garlicky for one's taste, the dish can be micro-waved in 10-second increments, which takes some of the edge off the garlic.
Dip the bread into the mixture, and enjoy. Bon appetit!

Personal Notes:
This lovely recipe, which Sandy served Polly alongside salmon when she visited him in Rhinebeck in 2012, reminds us that his trips to France have involved not only wonderful biking, but wonderful cuisine as well.
