1 pkg. rice-a-roni chicken flavor
2 Tbsp butter or margarine
1 tsp. dried basil
4 boneless, skinless chicken breasts
2 cups fresh/frozen broccoli flowerets
1 fresh tomato, chopped
1 cup (4 oz) shredded mozzarella cheese

Directions:
Directions:
1) Broil chicken breasts 5 minutes on each side. While chicken is broiling, saute rice vermicelli mix with butter in large skillet on medium heat until it begins to brown.

2) Add 2 cups boiling water, special seasoning packet and basil. Bring to boil on high heat. Place broiled chicken on rice and cover. Reduce heat to low. Simmer 10 minutes.

3) Stir in cooked broccoli and tomato. Cover and simmer 10 more minutes or until rice is tender and chicken is done inside.

4) Sprinkle chicken breasts with cheese, cover and let stand 3 minutes.
