2 C. Flour
1 C. corn meal
1/2 C. sugar
2 tsp baking powder
1/2 tsp salt
1 C. milk
1/4 C. Oil
2 Egg whites
1 fresh Jalapeņo, minced
1 C. cheddar cheese, diced

Directions:
Directions:
Pre-heat oven to 400 degrees. Mix all ingredients except the jalapeņos and cheese. After it has been mixed well then add the peppers and the cheese and stir together. Fill 12 muffin pan or a larger 6 muffin pan. Bake 20 minutes or until wooden pick comes out clean.
