2 tbsp sesame oil
1 cup chicken or veggie broth
1/2 cup soy sauce
1/2 cup smooth peanut butter
1/4 cup honey
1 1/2 tablespoons fresh ginger, minced
2 teaspoons ground cumin
2 teaspoons Fresh cilantro
1 teaspoon red pepper flakes
4 garlic cloves, minced
1 package of wide rice noodles.
1 Carrot- shredded
2 Scallions, chopped
a handful of sugar snap pea pods

Directions:

in a small fry pan heat up the sesame oil and saute the ginger, garlic and pea pods until tender. Set aside. Add honey, peanut butter, soy sauce, & broth. Whisk until smooth (if sauce seems too thick add a bit more broth) Simmer sauce 2 minutes.Add cumin, and cilantro and red pepper flakes. Add in the ginger-garlic mixture, and Pour sauce over pasta and toss. Top with shredded carrots, green and green onions.
