8 chicken thighs
8 oz. rice noodles
4 scallions
Marinade:
grated orange zest (optional)
3/4 c. fresh orange juice
1/3 c. honey
3 T. soy sauce
2 T. toasted sesame oil
1 T. fresh ginger, minced
1 T. garlic, minced
1/4 tsp. crushed red pepper flakes (optional)

Directions:
Directions:
Rinse chicken thighs and pat dry. Combine marinade ingredients, toss with chicken to coat. Cover and refrigerate 4-6 hours. 30 minutes before cooking, take chicken out and place in baking dish, season with salt and pepper, pour marinade over chicken. Bake for 45 minutes at 350° until golden brown, basting frequently. Prepare noodles according to package directions. Serve in bowls with chicken atop rice noodles and pan sauce poured on top. Garnish with scallions and serve immediately.
