24 oz of Monterey Jack cheese
1/4 c. butter
12 oz. mushrooms (optional)
1/2 onion
1/4 of small red bell pepper
8oz. ham, cut in strips
8 eggs
1 3/4 c. milk
1/2 c. flour
2 T. oregano or chives

Directions:
Directions:
Put 1/2 of the shredded cheese in the bottom of a 13x9 dish. In a separate pan, saute mushrooms, onion, and red bell pepper in butter until soft. Pour mushroms, onion, and red pepper on top of the cheese in the 13x9 dish. Layer ham and then the rest of the cheese on top of the mixture in the dish. In a separate container, mix eggs, milk, flour, and spices with a blender or mixer. Pour egg mixture over other ingredients in 13x9 dish. Bake for 45 minutes at 350 degrees. Let set for 10 minutes and then cut and serve.
