1/4 lb. bacon
1/2 c. chopped onion
2 c. raw rice
2 c. tomatoes
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. red pepper sauce

Directions:
Directions:
Fry bacon, remove from pan. Cook onions until tender in bacon fat. Add washed rice, tomatoes, seasonings and crumbled bacon. Cook over low heat about 10 minutes. Pour into 2 qt. casserole, cover tightly. Bake at 350º for 1 hour, stirring several times.
