Raspberry Chicken Recipe

2 whole boneless, skinless chicken breasts
2 tbsp. butter
¼ cup onion, finely chopped
4 tbsp. raspberry wine vinegar
¼ cup chicken stock
¼ cup heavy cream
1 tbsp. canned crushed tomatoes
½ cup fresh raspberries (optional)

Cut each chicken breast and flatten. Melt butter in a large saucepan. Raise the heat and add the chicken. Cook for 3 minutes per side. Remove and keep warm.

In the same pan, add onions and cook over low heat until tender, about 15 minutes. Add vinegar, raise the heat and cook, stirring occasionally until vinegar is reduced to a syrup. Whisk in chicken stock, cream and tomatoes. Simmer for 1 minute.

Return chicken to the pan, and simmer gently, basting often, until just done, about 5 minutes. Do not overcook. Let sit a minute, then serve the chicken on heat plates. Add raspberries to the pan and gently swirl the berries into the liquid. Spoon sauce over top of chicken.
