3 oz. semisweet chocolate
1 c. vegetable oil
2 c. flour, all-purpose
2 tsp. baking soda
1/4 tsp. salt
1 can (16 oz.) beets, drained
1 3/4 c. sugar
3 eggs
2 tsp. vanilla
1 tsp. orange or almond flavoring
1 cup chocolate chips

Frosting:
1 pkg. (8 oz.) cream cheese
1/4 c. butter
2 tsp. orange flavoring
1 tsp. vanilla
2 T. orange rind
1 box confectioner's sugar

Directions:

Grease and flour bundt pan. Melt chocolate with 1/4 cup oil - set aside to cool.

Process beets with remaining oil - set aside. Combine all dry ingredients in a bowl - set aside.

In large bowl, beat eggs, sugar, flavorings, then add chocolate, beets and flour mixture and chocolate chips.

Bake at 350º for 1 hour or until toothpick inserted comes out clean. Cool.

Frosting:
Combine all ingredients and beat.

Can't image a cake made with beets? We were in Denver on Mama's birthday and this recipe was used for her birthday cake. It was the richest chocolate cake I've ever tasted. I think the beets actually turned to chocolate!
