2 c. all-purpose flour
1 1/3 c. cake flour
2 tsp baking soda
2 tsp ground cinnamon
1 tsp salt
1 tsp baking powder
3/4 tsp ground cloves
1/2 tsp ground nutmeg
4 eggs
1 15 oz can pumpkin
1 c. buttermilk
1/2 c. unsweetened applesauce
1/3 c. canola oil
2 1/4 c. sugar

Directions:
Directions:
Preheat over to 350º. Spray 2 loaf pans with cooking spray. In a large bowl combine all dry ingredients. In another bowl whish eggs, pumpkin, buttermilk, applesauce and oil. Stir into dry mixture until moistened. Transfer to the two loaf pans evenly. Bake for 45 - 55 minutes or until toothpick comes out with moist crumbs. Makes 16 slices per loaf.
