2 c. fresh, chopped broccoli
1/4 c. chopped onion
1/4 c. butter or margarine
1 14.5 oz can chicken broth
1 qt. milk or light cream
1/3 c. grated cheddar cheese
1/8 c. grated Parmesan or Romano Cheese
dash cayenne pepper (important)
salt and pepper to taste
2 - 3 T. cornstarch (optional)
3 - 4 T. milk (additional as needed)

Directions:
In small saucepan, cook broccoli in small amount of water until done but no mushy. In large saucepan saute onion over medium heat in butter until translucent. Stir in chicken broth and heat, but do not boil. Slowly add milk and stir over medium heat until hot. Add broccoli, cheddar cheese, Parmesan cheese, cayenne, salt and pepper. Heat but do not boil. To thicken, make paste of milk and cornstarch and add as needed to soup.
