1 (9-inch) pie shell (unbaked)
1 T. soft butter
12 slices bacon
4 eggs
2 c. heavy cream
3/4 tsp. salt
Pinch of nutmeg
Pinch of sugar
Pinch of cayenne pepper
1/8 tsp. black pepper
1 c. (1/4 lb.) Swiss cheese, grated

Directions:
Directions:
Fry bacon until crisp, crumble into small pieces.
Combine eggs, cream, salt, the peppers, sugar, and nutmeg with hand beater; beat just long enough to mix thoroughly. Rub butter on surface of pie shell and then sprinkle bacon and cheese on the bottom of the crust. Pour the egg and cream mixture over the bacon and cheese. Bake in 425° oven for 15 minutes. Reduce heat to 300° and bake for 40 minutes more or until silver knife inserted in center comes out clean. Cut in wedges and serve immediately.

For a lighter taste, use 1 c. evaporated milk and 1 c. whole milk instead of the 2 c. heavy cream.
