1 gal. water

Bring salt, sugar and water to a boil and simmer till crystals are dissolved. Put 1 cup of brine in quart jar; fill with meat. Cold pack for 1 hour.

I remember mom canning meat on butchering day or the day after. Before home freezers were common this was the method to preserve meat.
