3 pounds beef short ribs
1 tsp. salt
1 tsp. ground black pepper
2 Tbsp. olive oil
1 large onion, sliced
1/2 cup red wine
3 Tbsp. brown sugar
3 Tbsp. red wine vinegar
1 Tbsp. Worcestershire sauce
1/2 tsp. Dijon mustard

Directions:
Sprinkle short ribs with salt and pepper. In a large skillet, heat oil over medium-high heat. Cook short ribs in hot oil until browned on all sides. Place short ribs in a 4-quart slow cooker.
In a medium bowl, combine onion, red wine, brown sugar, red wine vinegar, Worcestershire sauce and Dijon mustard. Pour onion mixture over short ribs in slow cooker. Cover and cook on low for 6 hours.
