1 head roasted garlic or 3 T garlic paste
1 medium russet potato
1 head cauliflower
1/2 t salt
2 T light whipped butter
3 T half and half (fat free)

Directions:
Directions:
Bring a large pot of water to boil. While water is coming to boil, peel and cube potato and cut the cauliflower into florets, removing the stalky bottom. If using bagged cauliflower, you need 5 cups. Add the potato and cauliflower to boiling water. Once in water, bring the water back to boil and then reduce heat to medium. Cook until veggies are tender; about 20 minutes. Drain the water and transfer to large bowl. To bowl, add garlic of your choice, half and half, butter and salt. Using a hand mixer or potato masher, completely blend until desired consistency is reached. Serve Warm.

You may substitute head of roasted garlic or paste for 3 1/2 T chopped garlic or 2 T minced garlic or 2 t garlic powder.
