10 oz. spinach, chopped (if frozen, thawed and squeezed dry)
1/2 tsp. salt
1/4 tsp. black pepper
1 tsp. oregano
1 tsp. onion powder
15 oz. ricotta cheese
4 medium flour tortillas
1/2 c. mozzarella cheese, shredded
1/4 c. Mexican cheese, shredded
salsa

Directions:
Directions:
Preheat oven to 400º. Coat a 9 x 12 baking dish with cooking spray. In a large bowl combine spinach, ricotta, mozzarella, oregano, onion powder, salt and pepper, mix well. Spoon one quarter of the mixture onto the center of each tortilla. Roll up the tortilla, folding in ends and placing side-by-side in the prepared baking dish. Spoon salsa over the tortillas and sprinkle each with 1 T. of the Mexican cheese. Cover with foil and bake 20 minutes. Uncover and bake until top is golden brown, about 10 minutes more.
