1 egg
1/2 c. milk, cold
1/2 c. sugar
2 c. all-purpose flour
1/4 c. shortening
2 tsp. baking powder
1 c. cold, cooked squash mashed

Directions:
Directions:
Preheat oven to 400º. Sift together flour and baking powder. In a separate bowl, mix egg, sugar, shortening and squash together well. Add flour and milk alternating until well mixed. Fill greased muffin pan 3/4 full. Bake 25 minutes.

I got this recipe from my friend Kathy Felder and it is a great way to use up leftover squash. Delicious too.
