Easy Lemon Squares Recipe

Ingredients: Crust 1 pounds 1 ounces all-purpose flour 4 7/8 ounces powdered sugar 3/4 pounds of chilled butter, cut into chunks
Filling 2 pounds 1 ounces sugar 3/4 cups all-purpose flour 9 eggs, lightly beaten 1 7/8 cup lemon juice

Directions:Crust Mix all ingredients in a mixer with a beater blade until dough forms. Press onto the bottom and up the sides of a half sheet pan. Bake about 15 minutes in a 350º oven until crust is lightly colored.
Filling While crust is baking, mix sugar with the flour in a large bowl. Measure out the lemon juice and set aside. When the crust is ready, mix the lemon juice into the sugar and flour mixture. Then mix in the eggs. Place the sheet pan into the oven again and then pour the filling batter into the crust (preventing cracks and spillage) and bake until firm. About 20 -30 minutes. Cool completely before slicing. I refrigerate them before slicing. Garnish as desired. Recipe can be doubled easily. |

Notes: This recipe is from a class Jill and I took at Cafe' Provence in Brandon. It was so delicious and easy that it has replaced my infamous (locally anyway) lemon square recipe! I halved the recipe for a half sheet pan as the original recipe is for a full sheet pan. Lemon juice is an acid and it will "cook" the eggs so don't add until right before mixing.
