1 3-4lb Whole Chicken
1TB Salt
A day before cooking, rinse chicken in cold water and pat dry. Salt liberally, cover and refrigerate. Remove chicken 1hr before cooking it.
1 Small Bunch Sage
½ Stick Butter Sliced
1 Onion Cut Into 1/8
3Sweet Potatoes Cubed
Olive Oil

Directions:
Directions:
Combine butter and sage, place under chicken skin breast side. Put the onion in the cavity of chicken. Toss the potatoes in olive oil, salt and pepper and set into baking dish. Place chicken on top breast side up. Place into preheated 425 oven. Bake about 1-1 ½ hrs or until chicken is cooked through. Remove from oven and let set 10minutes. Serve with roasted potatoes.
