Dressing:
2 eggs, beaten
1/2 c. sugar
2 T. flour
1/4 c. vinegar
1/2 c. water
1 - 2 T. butter, amount is personal taste
1 T. prepared mustard
2 T. Miracle Whip, amont is personal taste
Salad:
5 lbs. potatoes, peeled
12 eggs, hard boiled
10 oz. pickle relish
onions, chopped, to taste
salt, to taste
black pepper, to taste
celery seed, to taste

Directions:
Directions:
Dressing: Combine the sugar and flour: mix with the remaining dressing ingredients and cook until thick. While mixture is still hot, stir in the desired amount of butter and the mustard. Cool. Add Miracle Whip.
Salad: Cook and cube the potatoes. Dice hard boiled eggs; add other ingredients. Mix in cooled, cooked dressing.
