1 - 4 lb chicken or 2 - 2 1/2 lb frying chickens
4 T butter
1 C chopped onion
3 T flour
2 C milk
1 C chicken broth
1 - 4 oz can green chiles, seeded & cut in strips
1/2 - 10 oz can Rotel tomatoes with green chiles
10 or 12 tortillas, torn into sml pieces
1 1/2 t salt
1 lb. grated sharp cheddar cheese

Cover chicken with water & 1 T salt, cook until tender. Cool & remove chicken bones. But in lg. pieces. Melt butter, add onion & saute 1 min. Add flour, cook until bubbly. Pour in milk and broth, cook until thickened, stirring with a french whip. Add chiles & tomatoes. Place a layer of chicken in the bottom of a buttered shallow 3 qt. casserole, then a layer of tortillas, cheese then sauce. Repeat, with cheese on top. Bake at 375º until bubbly. May be made ahead and frozen. If your prefer this recipe hotter, add 2 T slivered jalapeno peppers. Serve with: Tomato & guacomole salad, hot tortillas.
