1 - 5lb Boston Butt with Bone
2 T. Emerils Seasoning Mix or your favorite Cajun spice mix
1 Sweet Onion (Vidalia) large chopped
1/2 c. water
1 bottle of your favorite BBQ sauce (I use Sonny's or Sweet Baby Rays)

Set your Crock Pot to Low. Chop onion and place in bottom of pot. Place boston butt on top of onion. Sprinkle with all of the Seasoning mix. Add water to the crock pot and cover. Let cook for up to 8 hours. About 1/2 hour before you are ready to serve, drain off some of the juices/fat (if you want) and fork shred to pork in the pot, removing the bone. Add the full bottle of BBQ sauce and let simmer another 1/2 hour or so. Serve on Pretzel Buns or your favorite bun. A side coleslaw will round out this family favorite!
