Cake:
2 c. sugar
3/4 c. crisco
1 stick butter (cold)
5 eggs separated
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
2 c. flour
1 c. buttermilk
1-1/3 c. coconut

Icing:
1 lb. box powdered sugar
5 T. butter cold
6-oz. cream cheese
1 tsp. vanilla
3 T. milk
Chopped pecans optional

Directions:
Directions:
350º, 30 minutes - Cream sugar crisco and butter. Add egg yolks 1 at a time, beating well after each. Add vanilla, salt, b soda and coconut and beat well. Alternately add flour and buttermilk.

Beat egg whites until stiff. Stir egg whites into mixture by hand and pour in 3 greased and floured cake pans. Frost and store in refrigerator.
