"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
In a large skillet, cook bacon over medium-high heat until crisp; remove bacon, and drain on paper towels.
In a medium nonstick skillet, heat pecans over medium-low heat, stirring often, for 6 to 8 minutes or until toasted and fragrant. Line an 8-inch-square baking pan with aluminum foil. Spray foil with nonstick cooking spray.
In a medium saucepan, combine chocolate, condensed milk, butter and cream. Cook over medium-low heat, stirring constantly, until chocolate melts and mixture is smooth. Remove from heat.
Crumble bacon, and reserve 1/4 cup. Stir pecans and remaining bacon into chocolate mixture. Spoon mixture into prepared pan; smooth top with a spatula. Sprinkle reserved 1/4 cup crumbled bacon over chocolate mixture, pressing gently to adhere. Cover and chill for at least 4 hours or until set. Cut into squares to serve.
