1/4 c. butter, melted
1/4 c. flour
1 egg
1 tsp. lemon juice
1/2 tsp. salt
1/4 tsp. black pepper
1 (14 3/4-oz.) can boned salmon, drained (reserve juice)
1/2 c. liquid (salmon juice plus milk to total 1/2 c.)
3 T. oil
fine bread or cracker crumbs (to coat)

Mix melted butter, flour, egg, lemon juice, salt, pepper, and salmon juice plus milk. Add salmon and mix. Roll spoonfuls in fine bread or cracker crumbs to coat. In a skillet, heat oil over medium heat . Brown patties on all sides, about 15 minutes. Drain on paper towels and serve.
