1 c. peanut butter, chunky or creamy
1 c. packed light or dark brown sugar
1 large egg, slightly beaten
1 tsp. baking soda
1 c. semisweet chocolate chips (6 oz.)

Directions:
Directions:
1. Heat oven to 350º.

2. In medium-size bowl, beat together peanut butter, brown sugar, egg and baking soda until mixture is smooth and well blended. Stir in chips until evenly distributed.

3.. Drop the dough by slightly rounded teaspoonfuls onto ungreased baking sheets, spacing the mounds about 2 inches apart.

4. Bake one baking sheet at a time in 350º oven until cookies are puffed and slightly golden but still soft to the touch, about 10 mins.

5. Let cookies cook on baking sheet on a wire rack for about 5 mins.

6. Then transfer the cookies to wire rack; let cool completely.

I don't think I ever get 6 dozen. They disappear while they are cooling! If you have anyone with a gluten-free diet - this works for them.
