2 (10 oz) pkgs frozen chopped broccoli (thawed) or 1 lb fresh broccoli florets
2 large eggs, beaten
1 cup mayonnaise
1 can cream of mushroom soup
1/4 cup sweet onion, grated
2 1/2 cups sharp cheddar cheese, grated & divided
Salt and pepper to taste
3/4 cup plain potato chips or 3/4 cup Cheese-it crackers, crushed

Directions:
Directions:
Preheat oven to 350º.
Cook broccoli in boiling salted water 3 to 4 minutes until crisp tender; drain & set aside.
Combine eggs & next 3 ingredients. Fold in broccoli, 2 cups cheese, salt and pepper. Spoon into a 9x13 pan lightly sprayed with Pam.
Bake 30 minutes. Remove from oven. Top with crumbs & remaining cheese.
Bake 10 more minutes or until light brown.
Serves 8 to 10.
