Microwave Pie Recipe

2 c milk
1/3 c flour
2/3 c sugar
2 tbsp butter
1/2 tsp vanilla

Directions:
Directions:
Heat 1 1/2 c milk in microwave on high until boiling, 4 - 6 minutes.
Whisk flour & sugar together (this keeps flour from making lumps when cooking); whisk in remaining 1/2 c milk, salt & beaten eggs.
Whisk in hot milk.
Cook in microwave 2 minutes; then stir.
Return to microwave 2 minutes; then stir.
Keep doing this until custard has boiled.
Remove from microwave; add 2 tbsp butter stirring constantly until melted.

This is basic vanilla custard. See variations below.

Pour filling into cooked 8 or 9-inch pie shell or graham cracker crust.

For coconut cream pie, add 1 cup coconut flakes; top with whipped cream and sprinkle toasted coconut flakes on top.
For banana cream pie, stir in 3 sliced bananas.
For butterscotch cream pie, use brown sugar instead of white and increase butter to 3 tbsp.
For chocolate cream pie, increase sugar to 1 cup & add 2 tbsp cocoa.
