½ cup butter
½ cup lard
1½ cups brown sugar
2 eggs
1 tsp. vanilla
2 cups flour
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
3 cups quick-cooking oats

-- Date Filling --
2 cups chopped dates
¼ cup brown sugar
1 cup water
¼ cup orange juice

Directions:
Directions:
Cream together butter, lard, and brown sugar. Add in eggs and vanilla and stir. In a separate bowl combine flour baking powder, baking soda, salt and oats. Mix dry into wet. Cover and chill dough 1 hour before rolling out. Preheat the oven to 350º . Roll out dough on floured surface. Use a cookie cutter or upside down water glass, press and transfer cookie to greased cookie sheet. Repeat until dough is finshed. Bake for 10 to 12 minutes. Cool before removing to wire racks to cool completely.

Date Filling: In a medium saucepan, combine and heat dates, sugar and water until dates are smooth. Stir occasionally. Remove from heat, add in orange juice and let cool before filling cookie sandwich.
