4 tbsp. butter
4 tbsp. sugar
1 large egg
1 tsp. lemon juice
rind of 1 lemon
¾ cup pastry flour
1 tsp. baking powder
¼ tsp salt
1 small jar Peach Jam

Directions:
Directions:
Preheat oven to 400º. Line muffin tin with tart shells. Whisk the flour, baking powder and salt together in a small bowl. In a medium bowl, cream together the sugar, butter, and egg. Add in the lemon rind and juice. Stir in the flour mixture, mix well. In each tart shell place 1 teaspoon of peach jam on the bottom covered with 1 teaspoon of mixture. Bake for 10 to 12 minutes.
