4 firm tomatoes
1 clove garlic minced
2 tbsp. onion minced
1 tbsp. fresh parsley
1 tsp. oregano
2 tbsp. fresh grated parmesan
½ cup seasoned croutons, crushed
¼ tsp. salt
¼ tsp. fresh black pepper
1 tsp. olive oil

Directions:
Directions:
Preheat oven to 400º. Slice off the top of each tomato and scoop out the pulp. Reserve 3 tbsp of pulp. Drain well. Pat inside of tomatos with paper towel to soak up excess moisture. In a medium bowl combine remaining ingredients and pulp. Mix well and spoon filling into tomato shells. Bake for 20 - 25 minutes.
