2 (14.5 oz) cans white beans
canola oil
1 jalapeņo pepper, minced
2 poblano peppers, chopped
1 large yellow onion, chopped
4 garlic cloves, minced
salt and pepper
1 tbsp ground cumin
1 1/2 tsp ground coriander
1 tsp ancho chili powder
4 c. low sodium chicken broth
2 limes juiced (plus extra wedges for serving)
1 rotisserie chicken, skinned and shredded
1/4 c. chopped cilantro
2-3 ears corn,
1-2 avocados

drain and rinse white beans. in medium bowl, mash HALF of the beans. Reserve all beans until needed.

grill the corn and when cool, cut off the cob.

add a little canola oil to dutch oven over medium-high heat. add peppers, onions, garlic and saute until softened. season with salt and pepper to taste. add cumin, coriander and chili powder and saute for a minute. stir in broth, lime juice bring to a simmer. add beans and simmer for 20 more minutes. taste and adjust seasoning if necessary.

Stir in chicken, corn and cilantro and simmer until heated through. Assemble your meal in a bowl. I like a scoop of chili, cheese, a scoop of chili, sliced avocado and some crushed tortilla chips. Can put a dollop of sour cream on top too. Put a lime wedge on the side and enjoy.

I love white chili. This is a variation of The Neely's recipe. Lime juice gives it good fresh flavor. Can also put some salsa on top. The tomatillo salsa (see recipe) goes well with the flavor of the lime.
