4 Tbsp butter
4 Tbsp flour
1 tsp salt
1/4 tsp pepper
1 tsp sugar
1 cup milk
3 eggs
1 1/2 cup parboiled squash

Directions:
Directions:
Melt butter, add flour, salt, pepper, sugar and cook. Stir in milk and cook slowly until thick. Beat egg whites until stiff. Add egg yolks and squash to mixture. Fold in egg whites. Cook in greased souffle dish or casserole at 350º for 1 hour.
