Fresh Arugula (or Spinach), Beet & Bean Sprout
Creamed or Feta Cheese
Herbs of Choice: Basil, Mint
Fresh Ground Pepper
Sea Salt
Olive Oil
Lemon
Carrots

Directions:
Directions:
Boil 2 medium fresh beets as you would potatoes and when cooked through remove from water, cool, peel then slice in thin strips. Add a nice serving of rinsed and dried arugula (or fresh spinach). Then a 1/2 bag of bean sprouts
Top with Creamed or Crumbled Feta Cheese which is infused with: Assorted Herbs of your Choice: Basil, Mint, Fresh Ground Pepper
Sea Salt and drizzeld with Olive oil
Squeeze Lemon if you want on top. There is no need for dressing, I promise!
Grate carrots on top for added zest and color.
Enjoy the most colorful and healthy salad and give your taste buds a beet sensation!!!
Serves 2-3 pax. If you double it serves 4-6.
