Ingredients: 3 cans Italian brand crushed tomatoes 2 cans Italian brand tomato puree 5 garlic cloves Dried parsley and oregano 2 bay leaves 2 tbsp olive oil Meat- such as sausage, pork, veal and or lamb If you just want meatballs, just use a piece of pork to start the sauce Salt and pepper Fresh parsley and basil

Directions:In a large Dutch oven heat oil and sauté sliced garlic till golden, remove garlic and set aside. Brown all meat and put on a platter. When all meat is well browned, lower heat and add crushed and pureed tomatoes, bring to a high simmer, add all meat, salt and pepper to taste, dried parsley, bay leaf and oregano. Bring to a simmer and simmer on low for at least 3 hours or more. If you're making meatballs add them to the last 2 hours of cooking. About 20 mins. before serving add the fresh parsley and basil. |

Notes: My Mom taught me how to make this, a fond memory of our kitchen in our Hoboken walk up apartment. Waking up on Sunday morning; you could always smell the sauce cooking. You need to keep one of the empty tomato cans with your wooden spoon next to the pot for stirring..my Mom always did this and I carry on this tradition. Also, as far as cooking time, she always said "The longer you cook it, the better it tastes".
