4 c flour
2 tsp. tumeric
1/2 tsp. salt
1/2 c butter
1/4 c lard or shortening
1/2 c ice water (may need additional tbsp or 2)

Meat Filling
2 tbsp butter
1 lb ground beef (or turkey or chicken)
1 small onion diced fine
1 tsp ground cardamom
1 tsp ground cumin
1 tsp tumeric
1 tsp thyme
2 tsp garlic powder (8 cloves fresh garlic crushed)
2 tbsp fresh grated ginger
1 tbsp Thai red curry paste
2 tsp salt
2 tsp pepper
1 scotch bonnet or habanero pepper (if you don't like it hot-do not add this!)
1 c beef broth

CRUST- In large bowl, combine flour and salt. Cut in butter and lard till mixture resembles coarse crumbs. Stir in water till mixture forms a ball. Shape dough into a log; refrigerate while you make the meat filling. After the meat filling, cut 9 or 10 equal slices of the pastry log. Roll each circle to 1/8" thick (thinner is better). MEAT FILLING- If you don't want the heat from the pepper, take a whole pepper, poke holes in it and tie it up in a piece of cheese cloth. Tie it and put the whole thing in the meat mixture to cook. Throw it away when done. Melt butter in skillet over medium heat. Saute onion, garlic and ginger till translucent. Stir in ground beef; add spices. Cook until evenly browned, stirring constantly. Add beef broth. Simmer until liquid is absorbed. Remove from heat; cool. ASSEMBLE PATTIES -Spoon equal amounts of filling in the middle of the pastry circle. Do Not Overfill! Fold over and press edges down with fingers then with fork to seal. Dip fork in flour to keep from sticking. Place on slightly greased baking sheet. Bake 400 º until slightly browned (10-15 minutes.) Word of caution: Wash your hands after handling the pepper. Avoid rubbing your eyes!
