4 thick pork chops (¾ ")
1 tsp olive oil
2 tbsp brown sugar
salt & pepper
1/8 tsp cinnamon
1/8 tsp nutmeg
2 tbsp. butter
2 tart apples (peeled, cored and sliced)

Directions:
Preheat oven to 175º. Place a medium baking dish in the oven to warm. Heat a large saucepan and add olive oil. Cook for 5 to 6 minutes, turning occasionally. Transfer to the warm dish, cover with foil and place in oven.
In a small bowl, mix the brown sugar, salt, pepper, and spices. Add butter to the saucepan and stir in brown sugar mixture and apples. Cover and cook until apples are tender.
Remove apples and arrange on top of chops. Return to the oven. Continue cooking the sauce until slightly thicked, Serve chops and spoon sauce over top.
