5 eggs
1 1/4 cups vegetable oil
1 (15 ounce) can solid pack pumpkin
2 cups all-purpose flour
2 cups sugar
2 (3 ounce) packages cook and serve vanilla pudding
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon pumpkin pie spice
1/2 teaspoon allspice
1/2 teaspoon salt

In a mixing bowl, beat the eggs. Add oil and pumpkin; beat until smooth. Combine remaining ingredients; gradually beat into pumpkin mixture. Pour batter into five greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 325 degrees F for 50-55 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

This original recipe didn't have enough spice for my taste. To the original recipe, I added 1/2 teaspoon pumpkin pie spice and 1/2 teaspoon allspice to make it spicier. The additional spices are not overwhelming but just enough. I used two bundt pans instead of loaf pans filled each half way.
