1/2 c. maple syrup
1/4 c. dijon mustard
1/4 c. apple juice
1 small red onion diced
1/2 tsp. allspice
1 tsp. ground cumin
8 boneless pork chops
extra virgin olive oil as needed for drizzling
salt & pepper to taste
3 apples sliced 1/2

Directions:
Preheat grill to medium high heat. Combine syrup, mustard, apple juice, onion, allspice, & cumin in a sauce pan and heat until mixture starts to thicken. Meanwhile, coat the chops with oil and season with salt and pepper. Place on grill seasoned side down, grill chops for 3-4 minutes on one side making sure to season the opposite side. flip chops and baste with reduced sauce, cook for 3 minutes more. Place pork chops in the oven to allow them to stay warm, drizzle apple slices in oil and grill a few minutes on each side, be sure not to over cook the apple slices. They should be tender but not mushy. Serve chops with apples on the side and drizzle with remaining sauce.
