1 bunch fresh spinach (chopped) or substitute 2 cups zucchini
1 bunch spring onions (chopped)
1 8 oz. container cottage cheese
1 cup crumbled feta cheese
1 stick butter (melted) and optional*
4 eggs (beaten)
1 box Jiffy Cornbread mix

Directions:
Directions:
Mix spinach (or zucchini), onions, cottage cheese, feta cheese and cornbread mix together in a bowl. Beat eggs separately, add to mixture and mix well until blended. Put half of melted butter in a 13 x 9 Pyrex dish. Add mixture and spread evenly. Drizzle remaining butter on top. Bake at 350º for 45 min. to approx. 1 hour. Test if done with knife. Cool slightly. Cut into squares. Best when warm.
* Instead of butter, coconut oil, or olive oil on the bottom of dish is a good alternative.
