Spareribs & Sauerkraut Recipe

1 slab spareribs
1-2lb. cans sauerkraut
(more if you like a lot of sauerkraut)
2 bay leaves
Handful caraway seeds
1 onion cut up
2-3 slices of bacon (cut up)
salt & pepper to taste

Directions:
Directions:
Drain sauerkraut, saving the juice. Cut ribs in pieces, place in roaster with a small amount of water. Brown on 400º about 1 hour. Rotate & flip pieces to brown both sides. When ribs are browned remove from roaster & mix sauerkraut, bay leaves, caraway seeds, onion,
salt & pepper. Add sauerkraut juice with the juice from the roaster and mix. Place ribs back in roaster mix in the sauerkraut mixture. Place bacon on top of the rib / sauerkraut. Bake 1 1/2 hours at 350º.

Serve with whole potatoes that can be put in the roaster to bake or with mashed potatoes.
