6 boneless chicken breasts
1 c. blackened Cajun spice
6 oz. butter
3 lbs. fettuccine, cooked
1 c. cream
6 T. butter
1 T. garlic, chopped
1/4 green bell pepper, cut into thin wedges
1/4 red bell pepper, cut into thin wedges
1/4 yellow bell pepper, cut into thin wedges
1/2 c. green onion, chopped
1/2 lb. mushrooms, sliced
1-8 oz. Parmesan cheese
salt and pepper to taste

Trim chicken fat, pat dry and press chicken into Cajun spice mixture. Heat butter in a large saute pan and sear both sides. Heat oven to 350º, transfer chicken to oven to finish cooking, approximately 30 minutes. Heat butter, garlic and vegetable for 3 minutes and add cream. Simmer to a roiling boil and season. Add fettuccine, when heated through, place on a serving platter. Slice chicken and arrange on pasta. Serve with bread or toasted pita bread.
