2 lbs small new (red) potatoes, 1/2 cup (1 stick) unsalted butter, 3 Tbls water, 2 tsp salt, 1/2 tsp pepper

Directions:
Directions:
Scrub potatoes and peel a strip around center of each. (This allows some butter to seep into the potatoes) Melt butter in deep skillet. Add potatoes, water, salt and pepper. They should be in one layer. Cover and cook over medium to low heat for 25 minutes, shaking the pan occasionally or turning by hand to keep form sticking, If liquid remains in pan at the end of cooking time, reduce so that the potatoes are coated with butter.
