1/2 c salad oil
1/3 c lemon juice
1 tsp grated onion
1 tsp sugar
1/2 tsp salt
1/2 tsp dried oregano leaves
1/4 tsp dried thyme leaves
1 large navel orange
4 c bite sized Chinese cabbage
2 c bite sized pieces of spinach
1 c cooked chicken, cut into thin strips
1/4 lb natural Muenster cheese, cut into thin strips
6 pitted ripe olives, halved

Directions:
Directions:
Make dressing: combine all dressing ingredients in jar with tight fitting lip; shake vigorously, to combine. Refrigerate until well chilled (2 hrs).

Peel orange, removing all white membrane. Cut crosswise into thick slices; cut each slice in half.

Refrigerate orange slices, along with rest of ingredients, until well chilled.

Just before serving, toss cabbage with spinach in a lg salad bowl.

Arrange orange slices, chicken, cheese & olives over greens.

Shake dressing; pour over salad. Toss gently to combine.
